For this dish I've chosen an Albacore tuna, for its meat similar to Red tuna. The Albacore tuna usually lives far from the coast but, it is frequently caught during the summer season when it gets closer.
Tuna preparation:
- Albacore Tuna
- Rosemary
- Sage
- Thyme
- Oregano
- Salt
- Pepper
- Extra Virgin Olive oil
Cut a filet from the tuna, season with salt, pepper and ground aromatic herbs. Brown on both sides with olive oil in a non stick frying pan.
Gravy preparation:
- Red onion
- Piccadilly tomato
- Basil
- Oregano
- Extra Virgin Olive oil
- Salt
- Pepper
- wet stale bread
Put all the ingredients in a blender with a drizzle of olive oil.
Spread the gravy in the middle of the dish and put over the tuna.
